When following a workout on a Garmin device, the device will automatically add a data screen specific to that workout.

No, the workout data screen is not able to be edited or customized.

Can I View Other Data Screens During a Workout?

Yes, all data fields that you have set in the activity profile in use can be scrolled to during the workout.
